Most vanilla extracts contain sugar or are made with grain alcohol. Homemade vanilla is the easiest thing to make and I absolutely adore the rich fragrance of vanilla beans in my house. You may want to re-bottle this in smaller amber glass bottles to give as gifts!
Humble Kitchen Vanilla
1 750 ml bottle potato vodka
*Slit each bean lengthwise with a knife. Pour out about 1/2 cup of the vodka and put the beans in the vodka bottle. Add back extra vodka to fill the bottle up, replace lid and set the bottle in your pantry for 4-6 weeks, shaking every once in a while. I usually leave the beans in the bottle as I'm using it, but you can remove them to use in other recipes.
