one easy grain-free cookie, two ways...


It's hard to find a grain-free substitute for the cookies I made all the time in my unhealthy past life.  I'm not promising I'll never make them again, in fact I'd like to makeover my FAVORITE cookie recipe some day (whole wheat oatmeal chocolate chip with chocolate-covered toffee baking bits-I can smell AND taste them right now!), but in the meantime here is a basic cookie recipe using almond flour that can be adapted to your liking.  Last time I made one batch with chocolate chips (I've been wanting to try this recipe) and one with macadamia nuts and a little extra salt and couldn't decide which I liked better...

Basic Almond Flour Cookies

1 3/4 Cup Almond Flour
1/4 Cup raw Honey
1/4 Cup organic Butter or Coconut Oil
1 tsp Vanilla
1/4 tsp Himalayan Salt
1/4 tsp aluminum-free Baking Soda
+ 3/4 Cup chocolate chips or nuts or raisins...

*Preheat oven to 350 degrees.
Mix all ingredients and add 3/4 Cup of your desired mix-in.
Drop spoonfuls on a parchment-lined baking sheet and flatten each cookie.
Bake for 6-10 minutes until bottoms are slightly golden brown.
Very quick and easy!
