sweet potato casserole...

 ...a healthier version of my favorite Thanksgiving dish...




Sweet Potato Casserole

4-5 sweet potatoes, roasted at 400 degrees for 30 minutes or until soft (turning once)
2 eggs
1/2 Cup organic heavy cream
1/2 Cup organic butter
1/4 Cup honey
1/2 tsp himalayan salt

*Blend these ingredients together and then mix topping:

Topping

1 Cup pecans, chopped
1/2 Cup almonds, finely chopped
1/8 Cup honey or 1/4 Cup coconut sugar
2 Tbsp organic butter 
2 Tbsp coconut flour
1 Tbsp vanilla extract
1/4 tsp himalayan salt

*Mix and spread topping over potato mixture in a casserole or baking dish.  Bake at 350 degrees for 40 minutes.
