how to make super healthy mayonnaise...



 

Mayonnaise is one of the easiest things to make and so much healthier when made at home with high quality oil, eggs and no sugar. 

Humble Kitchen Mayonnaise

2 eggs
1/4 lemon, juiced
1/2-1 Cup Olive Oil
1 Tbsp Whey (optional)
Himalayan Salt

*Crack 2 eggs in a blender.  Add lemon juice and salt...

 

Blend on high for about 15 minutes.  Leave blender on high, open the top and pour olive oil in a thin stream until you hear the sound of the blender change and the mayonnaise thickens...voila!  Too easy. 


 

Mayonnaise will last about two weeks in the refrigerator.  If adding whey, let the mayo sit at room temperature for about seven hours before refrigerating to allow the mayo to culture.  Whey is the clear liquid that separates from the curds of milk or yogurt and will add enzymes, increase the nutrient content and allow the mayonnaise to keep for several months.
