I can't drink coffee, but my husband does and I have a sip every once in a while. He only likes French Vanilla creamer and even though there are 'healthier' versions from the grocery without partially hydrogenated oils and high fructose corn syrup they usually still contain a lot of sugar and carrageenan. After finding a number of recipes online I came up with this for him...
FRENCH VANILLA COFFEE CREAMER
4 cups Organic Coconut Milk (make it or use 2 cans Native Forest Organic-I think they're BPA free)
or Organic Heavy Cream (next I'll try raw cream)
1/4-1/2 Cup Raw Honey or Grade B Maple Syrup
2 Vanilla Beans (split and add insides and then add chopped whole bean or use powdered vanilla)
1/4 tsp Himalayan Pink Salt
*In a saucepan combine milk/cream, honey/syrup and salt over meduim heat. Add vanilla and whisk everything together. Cover and let sit on low heat for 30 min. Strain through a sieve, bottle and refrigerate. Should last a couple weeks, although it never does in my house!
